I entered a baking contest a few months back but had to wait to post this until after the winners were announced. Long story short: didn't win! BUT, it was so fun to make up this homemade cookie bar recipe, full of chocolate, buttery goodness and topped with a trail mix spread. Finally, my own recipe!
I hope you enjoy making these and devouring them just as quickly as my family.

Cookie Bar Ingredients:
Graham crackers (2 packs of 8 crackers from the box or about 3 cups crushed)
½ cup sweetened condensed milk
2 cups flour
1 cup butter softened
½ cup brown sugar
4 oz. semi-sweet chocolate chips
Dark chocolate candy melts or dark chocolate chips
Or whatever trail mix you like best: peanuts, raisins, etc.
Cookie Bar Instructions:
Preheat oven to 350 degrees
Crush graham crackers into fine crumbs (I put crackers in a Ziploc and made crumbs via a roller)
Add sweetened condensed milk to graham cracker crumbs and mix together
Pour half of the mixture to the bottom of a 9x9 pan lined with parchment paper or sprayed well with cooking spray and set other half of the mixture aside
For the cookie mixture: mix the flour, softened butter, and brown sugar until well blended
Fold in the chocolate chips (may use more or less than the recipe, depending on your liking for chocolate)
Pour the cookie mixture on top of the graham cracker crumb bottom
Top with the second half of the graham cracker crumbs and condensed milk mixture
Bake for 30 minutes
Wait for cookie bar to cool, especially the top of the bar
Chop pistachios and other toppings to small crumbs (may use a variety of nuts and dried fruit or coconut flakes)
Melt chocolate and pour on top of the bars
Add the toppings before the chocolate cools and sets
